A Recipe For Domestic Romance

If you are in a committed relationship and have children
then you probably understand that the chances of actually
preparing an entire candlelight dinner can be nearly, if
not completely, impossible.
So, here is my quick and easy solution to get a little bit
of romance in at the end of a hard day or on a Friday or
Saturday night (since we know your days of "club hopping" are
probably long over!) My husband and I shared one of these late
Valentine's night. He doesn't even have much of a sweet tooth
and he LOVED it!
You will need:
- 1 box Ghiradelli Chocolate Brownie mix
- Good vanilla ice cream
- Raspberry sauce (recipe to follow)
- A bottle of port (tawny or ruby, your choice) optional!
Prepare brownies as directed. Once your brownies are in the oven
make a phenomenal raspberry sauce. Ina Garten (Barefoot Contessa) has the perfect raspberry sauce recipe, it makes exactly two cups and is super easy!
Raspberry Sauce:
- 1 half-pint package fresh raspberries
- 1/2 cup granulated sugar
- 1/4 cup water
- 1 cup (12 ounces) seedless raspberry jam
- 1 tablespoon Framboise liqueur
Place the package of raspberries, the granulated sugar, and
1/4 cup water in a small saucepan. Bring to a boil, lower
the heat, and simmer for 4 minutes. Pour the cooked raspberries,
the jam, and Framboise into the bowl of a food processor fitted
with the steel blade and process until smooth. Chill.
Once you have the kids in bed grab one bowl, two spoons, if your
brownies have cooled completely slice two and place them in the
bowl and pop them in your microwave for 20 - 30 seconds. You
want them warm, almost oven-fresh warm.
Place one scoop of ice cream on each brownie and drizzle with
raspberry sauce. Grab a small pitcher (or even a cute gravy
boat)and pour extra sauce into the pitcher. Pour two glasses
of port and retreat to your favorite spot in the house. Ours
is usually our bedroom where we can pop in a movie, turn down
the lights, curl up in bed and enjoy a late night treat.
Obviously this isn't low-carb or diet friendly, but for one
evening every once in a while - it's not gonna kill ya, besides
the stress release alone is well worth it!
