Cranberry Pumpkin Bread

 

Quantity

Ingredients


Section 1:

16 oz. Can
16 oz. Can
1 cup
2/3 cup
4 whole

Section 2:

3-1/2 cups
1-2/3 cups
2 teaspoons
2 teaspoons
3/4 teaspoon
1 teaspoon




Whole Cranberry Sauce
Solid Pack Pumpkin
Chopped Pecans
Unsweetened Applesauce
Eggs



All Purpose Flour
Sugar
Baking Soda
Pumpkin Pie Spice
Salt
Baking Powder


In large bowl, mix together all ingredients from Section 1 until well mixed.  Add all dry ingredients from Section 2 to wet mix and stir until well moistened.  Pour batter into two greased x loaf pans.

Bake at 35F for 65 minutes or until bread tests done with a wooden toothpick.  Cool bread completely then drizzle glaze over top and sides if desired.

Glaze:  1 cup powdered sugar, 1/4 cup orange juice, and 1/8 teaspoon ground allspice.  Mix until completely blended and smooth then drizzle onto bread.
